I'm getting ready to start a small cattle operation, and I'd like to corner the horn, hide, and meat markets. I want heavily-muscled, easy calving, and docile maternal heifers and cows to contrast with the lighter-muscled Longhorn bulls (used to produce the ideal horns and hide pattern)...I was thinking Charolais or Simmental? (DO NOT give me answers that relate to "how dare you eat those poor cows" because I WILL NOT listen to you.
Charolais and Simmental are excellent breeds. The horn and meat markets do not go hand an hand. As a general rule cattle that have the long horns ex long horn lack the muscle an meat found on other breeds. Charolais and Simmental are excellent breeds because the meats are lean (Laura's Lean Beef uses Charolais, Simmental, Limosine, and Gelbvieh.) Simmentals are not known for their milking abilty so consider using Charolais cows with a Simmental bull creating "hibrid vigor" which will cause enhancement of the genes. For easy calving use a bull with a birth weight under 90 lbs the bulls birth weight is very important for calving ease. Most all cows can be doscile but is determined by how often the cows are feed and handled. breeds with "ear" (floppy ears, ex brahama) are tipically more nervous breeds,
