(POSTING AGAIN) A cooking challenge!! What can I make for dinner with these ingredients?
Last time I did this on here I had an amazing dinner, so I'm trying again.
I'm going to list the items I have in my kitchen, & I need a meat, and two side dishes (starch & vegetable).
Here's what I have:
-boneless chicken thighs
-cream of mushroom soup
-small white beans
-canned carrots
-canned small whole beets
-olives
-frozen broccoli, onion, mushroom & pepper blend
-frozen California mix (broccoli, carrots & cauliflower)
-1/2 bag frozen spinach
-orange juice
-potatoes
-greek yogurt (vanilla and plain)
-milk
-breakfast sausage
-bacon
-eggs
-basil paste
-sharp cheddar & pepper jack cheeses
-almost all spices (we have two spice cabinets, both packed to the max)
-mustard, ketchup, mayo
-bread crumbs (panko & italian seasoned)
I don't want anything too starchy (no bread, pasta or rice), nothing with sugar, nothing too spicy (a little spice is okay) & nothing fried.
Any suggestions are appreciated.

You can make a cassoulet like dish with the beans, chicken, sausage and bacon. The beans get flavored with the bacon and cooked with the sausage. The chicken gets roasted separately and served atop the cassoulet.
Perhaps a spinach souffle as a first course and potatoes dauphenoise to go with the cassoulet
